Our first fish masterclass is a huge success!

We’ve just spent a fabulous two days with Chef Oliver Thompson (Ollie) leading our very first Fish Masterclass – teaching students everything they need to know about fish cuisine.




Students came for either one or both days, learning lots of skills, such as how to fillet different types of fish, how to cure fish and how to cook fish using different methods. 

Ollie also demonstrated and taught the students the art of making sauces or butters to go with each fish dish, as well as  advising on what sides complement each dish beautifully and the students got to enjoy a beautiful lunch each day.




Ollie lives in Cornwall, and he and his wife, Harriette (Jacqui’s daughter) personally sourced (and delivered!) all the fish from the fish markets at Newlyn and Port Isaac harbours. 

Ollie is a fish expert, having worked at Bistro Bruno Loubet, 3-Michelin starred restaurants Le Relais Bernard Loiseau and Le Petit Nice de Passedat, followed by the 2-Michelin starred, Restaurant Nathan Outlaw, The Mariners and Fish Kitchen. He also opened the successful Pilchards at Port Gaverne – awarded 2 AA Rosettes within 6 months.
